Renee’s Stuffed Peppers
    by Jon HassingerAs the man of a house, you are responsible for certain things. Taking out the trash, killing spiders, reaching things in high places , and the occasional purchase of flowers.
I've accepted these things as my duty.
However, sometimes a man is required to step up his game as Man of The House, if his woman is stepping up hers.
I speak of doing the dishes and foot massages.
And what part of Renee's game has been stepped up too, that would cause such whippage?
Her cooking.
And it isn't like she just all of a sudden became an amazing cook, she's always been great. And coming from me that says a lot, since I have been surrounded my whole life, by excellent cooks. My mother and Mrs. Agnew, to name a few.
So last night she fixed up a new one in our 2+ year life together; Stuffed Peppers.
And to be honest, I was excited and curious at the same time. Roasted Peppers were not a staple in the Betty Hassinger Cook Book.
And here's how it went...
First Renee hollowed out two green peppers, from a hole in the top. Picture your first move when making a Jack-O-Lantern. She then roasted them in our toaster oven for about 15-20 minutes.

Then, she simmered ground beef, chopped red onions, garlic, green onions, and tomatoes, over medium heat.

She then mixed in a spaghetti sauce (gravy to all you Italians), Caribbean Hot Sauce, and chopped Cilantro.
Before I go any further, Renee protested that I not tell anyone about her combining of Spaghetti and Hot Sauce. I don't know why. Imagine a spicy tomato sauce...It was awesome.

After the spicy sauce, ground beef, etc, were all "married", it was used to fill the hallowed out roasted peppers.

Then, the final touch...

Melted Pepper Jack cheese on top.
Two things:
1. Don;t use Pepper Jack. Because some cheeses melt right, and some don't. So use Cheddar, American, whatever a grilled cheese calls for.
2. After roasting the peppers, and right before you add the beef mix, cut the peppers down the middle, to make two separate bowls. This will make for more convenient eating.
This delicious meal was fun and easy to make, and you can really go all over the place with it.
I loved it. But the next day, those who worked in close proximity with me, did not.

Mozzarella….or Muenster Cheese would work the best…Mama Agnew makes that from time to time minus the heat but I would love a bite.
